Here is a page from the war diary of the AIF 15th Battalion (http://www.awm.gov.au/collection/records/awm4/23/32/awm4-23-32-40.pdf) for the 4 July 1918 attack on Le Hamel and Vaire Wood.  Supposedly the first modern "integrated" operation (infantry, armour, artillery, air), under Lt. Gen John Monash.  Also another of the same but more elaborate - I can't recall the provenance for that one (perhaps I've mentioned it elsewhere, memory like a sieve).

Does anyone know how they looked? Or were they using NATO map symbols back then?

Which units are you referring to, and in what context? On maps I've seen the unit is just written down, abbreviated if more than a few letters long

Further to divisional-army corps depiction above, here is the AIF 16th Battalion disposition map from June 1918 (from their war diaries), showing infantry small unit symbols.
